pascal-doquet-champs-libres-blanc-de-blancs-nv-075
Pascal Doquet Champs Libres Blanc de Blancs NV AOC 0,75l

Champs Libres is Pascal Doquet's non-vintage Blanc de Blancs, from the winegrower in Vertus, in the southern part of the Côte des Blancs: an Champagne Extra Brut made exclusively from Chardonnay, in a 0.75-liter bottle. According to the supplier's product sheet, this bottle was disgorged in 2024.

Pascal Doquet has worked in the vineyards since 1982. From 1995 to 2003, he ran the family domaine, Doquet-Jeanmaire, founded in 1974 through the union of two families; in 2004, after buying out his sisters' shares, he became fully independent and began bottling under his own name. Today, Doquet farms just under nine hectares, with vineyards in Vertus, on Mont Aimé and in Le Mesnil-sur-Oger.

Doquet stopped using chemical weedkillers in 2001, works the soil beneath the rows, makes its own compost and uses plant-based preparations to reduce copper and sulfur as well. The path to organic certification began in 2007, and the 2010 harvest was the first to be certified. In the cellar, only indigenous yeasts are used for fermentation, mostly in enamel-coated steel tanks; dosage is made with concentrated grape must instead of traditional liqueur, and the wines remain in the cellar for at least three years before release.

Champs Libres, meaning “open fields,” is the house's Blanc de Blancs with the widest sourcing area. In the lot based on 2018, the Chardonnay came from six locations: Vertus, Le Mesnil-sur-Oger, Villeneuve, Mont Aimé, Bassuet, and Bassu. Mont Aimé, an isolated hill that marks the southern end of the Côte des Blancs, has chalk rich in limestone and siliceous rocks; Bassuet and Bassu are in the Perthois, where the hills have been replanted with vines since the 1970s. The wine ferments in a tank, undergoes malolactic fermentation, and receives a dosage of just a few grams per liter.

With such a low dosage, Champs Libres is a dry Champagne, in which the Chardonnay is presented unadulterated. Doquet links generosity and vinous character to the clay soils of Vertus, and finesse and longevity to Le Mesnil. This Champagne is best served chilled, at around 9 °C, as an aperitif or with raw fish and shellfish.

In Doquet's range, Champs Libres is also available as a Premier Cru, with Pinot Noir and Chardonnay from Vertus and Bergères-lès-Vertus. Alongside it are Arpège, a Blanc de Blancs Premier Cru from Vertus and Mont Aimé; Diapason, a Blanc de Blancs Grand Cru from Le Mesnil; and the vintage Cœur de Terroir wines, one for each village.

In the STELT selection, this Champs Libres is the Blanc de Blancs to discover Pascal Doquet: a dry, direct Champagne made from Chardonnay, to open as an aperitif or with seafood dishes.
