This cuvée comes from a selection of the oldest vines Doquet owns in the village. The bottle is 0.75 liters.

Pascal Doquet has worked in the vineyards since 1982 and from 1995 to 2003 ran his family domaine in Vertus, Doquet-Jeanmaire. The vineyards in Le Mesnil come from his mother's family: his grandfather was already making wine there in the 1930s and brought together almost a hectare in the lieu-dit Champ d'Alouettes, of which Pascal now owns sixty percent. In 2004, after acquiring his sisters' shares, Doquet became independent and since then has also put his own name on the Grand Cru wines from Le Mesnil.

When this vintage was born, Doquet had already abandoned chemical weed control, in 2001; organic certification, begun in 2007, came with the 2010 harvest. Only indigenous yeasts ferment in the cellar, and the dosage is made with concentrated grape must instead of traditional liqueur.

Le Mesnil-sur-Oger, Grand Cru of the Côte des Blancs, is known for the finesse, minerality and longevity of its Champagne. Doquet has very old plots halfway up the slope: Champ d'Alouettes, Les Migraines, planted in 1929, and vineyards in the lieux-dits Chétillons, Coullemets and Finciarts. For the Cœur de Terroir series, the producer selects the best lots from these vineyards and vinifies some of them in oak barrels.

Doquet presents this cuvée as a full-bodied Champagne, better suited to accompanying meals than to serving as an aperitif. In Champagne, 2005 brought no major weather incidents: after a cold, dry winter and a mild spring, humid heat from mid-August to mid-September encouraged mildew, but the harvest took place in the second half of September, in very sunny weather. At twenty years old, a Champagne made from Chardonnay has usually moved beyond youthful tension toward broader aromas of dried fruit and toast.

The Cœur de Terroir series brings together Doquet's vintage wines, one per village: Vertus Premier Cru, Le Mont Aimé Premier Cru and Le Mesnil-sur-Oger Grand Cru, the series' only Grand Cru. The name was already in use at the family house, which had given it to its 1989 Blanc de Blancs. Alongside the series, Doquet produces Diapason, the non-vintage Blanc de Blancs Grand Cru from Le Mesnil.

In the STELT selection, this Cœur de Terroir 2005 is Pascal Doquet's vintage Grand Cru: a Champagne from Le Mesnil with twenty years behind it, to be served with fish in sauce, shellfish or white meats.
