Domaine Ganevat
The domaine is based in Rotalier, in the south of the Jura, and is run by Jean-François Ganevat, who took over in 1998 after a period working in Burgundy. The farming is organic and biodynamic, with a wealth of old vines and nearly extinct Jura grape varieties.
Cellar work alternates between two approaches: ouillé wines, with topped-up barrels and a direct profile, and sous voile wines, aged under a layer of yeast with the region’s characteristic oxidative note. Sulfur is kept to a minimum, and fermentation takes place with indigenous yeasts.
The range is unusually broad and changes from year to year. Stored under controlled conditions, with traceable provenance.
