Advisory & wine sourcing

Building a cellar is different from buying bottles. It requires direction: what to keep, what to drink, what to wait for.

STELT supports private collectors and restaurants through both stages: selection and sourcing. Through an established network of producers, importers, and specialized merchants, clients gain access to rare wines, historic vintages, and limited allocations, with verified provenance and documented conditions.

Wine sourcing

When a bottle cannot be found on the market, the search starts elsewhere.

Historic vintages, sought-after producers, distinctive formats: from a single bottle to a complete collection. The network of international operators STELT works with provides access to:

  • great Bordeaux and Burgundy
  • collectible Champagne and off-market vintage Champagne
  • mature vintages that are difficult to find
  • limited allocations from iconic producers

Every bottle is examined for provenance, storage, and condition before being offered. If something does not add up, it never reaches you.

Authenticity and security

No bottle enters the catalog without a traceable history.

The sources are always the same: producers, official distributors, and recognized international merchants. No opaque channels, no step that cannot be traced.

For every bottle, the fill level, capsule, label, and storage conditions are checked. Photos of the actual bottle are available upon request, before purchase.

Restaurant consulting

A wine list is not built by simply choosing labels. It is built around margins, turnover, and what the venue wants to convey.

Support can cover:

  • producer selection — consistent with the cuisine and the venue’s positioning
  • wine list structure — balance between price ranges, wines by the glass, and bottles to sell
  • price positioning — sustainable markups without discouraging orders
  • ongoing sourcing — consistent supply, even for hard-to-find labels

Our international network provides access to wines that rarely enter traditional distribution channels: a tangible way to stand out from neighborhood wine lists.

Private cellars

A cellar is built over time, and first of all, you decide what it is for.

For drinking. A selection intended to be opened: ready-to-drink vintages, producers to follow, and the right bottles for important occasions.

For keeping. Labels chosen for their aging potential and strength on the secondary market, with purchases planned year after year rather than concentrated in one period.

In both cases, the process is the same: define a direction, select producers and vintages, source hard-to-find bottles, and spread purchases over time.

Investment Wineries

Some bottles retain their value over time. Not all of them, and not by chance.

The selection is based on three criteria:

  • producer reputation — names with an established history and stable demand, not passing trends
  • genuine rarity — limited production, scarce vintages, uncommon formats
  • secondary-market liquidity — labels that are actually traded, not merely theoretically valuable

This is complemented by the aspect that is often overlooked: documented provenance and professional storage. These are the conditions that determine whether a bottle can be resold tomorrow.

No return forecasts: only transparent selection criteria and bottles in verifiable condition.
