Salon

Salon was founded in Le Mesnil-sur-Oger from an idea by Eugène-Aimé Salon, who in the early 20th century decided to produce a Champagne from a single cru, a single grape variety, and a single vintage. The first vintage released was 1921, and that principle has never changed.

Every bottle is pure Chardonnay from Le Mesnil-sur-Oger, a grand cru of the Côte des Blancs, and is released only in years deemed worthy: over a century, just over forty vintages have been declared. Vinification excludes malolactic fermentation, and ageing on the lees exceeds ten years, with production limited to around sixty thousand bottles.

The available vintages are stored at controlled temperature and humidity, with the provenance of every bottle traced.
