Wines of Jura

Jura is a tiny region nestled between Burgundy and the Swiss border, and it is the only one in France to have built its identity on a technique rather than a grape variety: aging under a veil of yeast, without topping up the barrel.

This is where "sous voile" wines and Vin Jaune originate, with their oxidative profile of walnut and curry, alongside "ouillé" wines with a more direct approach. The grape varieties are Savagnin and Chardonnay for whites, Poulsard, Trousseau, and Pinot Noir for reds, often with very low yields.

The STELT selection prioritizes producers who work organically or biodynamically, with reduced sulfur. Controlled storage and traceable origin.
