Cédric Bouchard

Cédric Bouchard produces in Celles-sur-Ource, in the Côte des Bar, under the Roses de Jeanne label. The project began in 2000 on minimal acreage and introduced a radical approach compared to the traditional blending method.

Each cuvée comes from a single parcel, a single grape variety, and a single vintage, even when the label does not indicate the year. Yields are among the lowest in the region, pressing is slow, dosage is absent, and the pressure in the bottle is deliberately reduced for finer bubbles.

The Les Ursules, Val Vilaine, Côte de Béchalin, and Creux d'Enfer parcels are released in only a few thousand bottles each. Controlled storage, verified provenance.
