Cédric Bouchard

Cédric Bouchard produces in Celles-sur-Ource, in the Côte des Bar, under the Roses de Jeanne label. The project began in 2000 on minimal acreage and established a radical approach compared with the tradition of blending.

Each cuvée comes from a single parcel, a single grape variety, and a single vintage, even when the label does not show the vintage. Yields are among the lowest in the region, pressing is slow, no dosage is added, and bottle pressure is deliberately reduced for finer bubbles.

The Les Ursules, Val Vilaine, Côte de Béchalin, and Creux d'Enfer parcels are released in only a few thousand bottles each. Controlled storage, verified provenance.
