Chantereves

Chanterêves was founded in 2010 in Savigny-lès-Beaune by Guillaume Bott, formerly at Domaine Simon Bize, and Tomoko Kuriyama, a winemaker trained in Geisenheim, in the Rheingau. They describe themselves as négociant-vinificateurs: they buy grapes and make the wine themselves. Since 2020, they have tended their own vineyards, almost five hectares across Hautes-Côtes de Beaune, Chorey and Savigny.

Organic viticulture, not certified. The whites ferment with indigenous yeasts and remain for twelve months in used barriques; the reds have been made with whole clusters since 2014. No fining and, as a rule, no filtration. Aligoté is an expression of identity here.

The STELT selection includes Bourgogne Aligoté Les Chagniots, Chardonnay and Rouge, Santenay Blanc, Hautes-Côtes de Beaune Les Monts de Fussey and Corton-Charlemagne Grand Cru 2021. Provenance verified.
