Dhondt-Grellet

The house is based in Flavigny, in the Côte des Blancs, and is run by Adrien Dhondt, who took over from his parents Éric Dhondt and Édith Grellet. The estate is fragmented across numerous small parcels.

Work in recent years has shifted the approach toward parcel-by-parcel vinification: fermentation in barrel, avoided malolactic fermentation, low dosages, and extended ageing. The result is taut, saline Blanc de Blancs wines, with a definition that develops over time.

The range includes Cramant grand cru, Les Terres Fines premier cru, and Dans un Premier Temps, the house's entry-level cuvée, also available in large formats. Controlled storage, traceable provenance.
