Domaine du Collier

The domaine was established in 1999 in the Saumurois by Antoine Foucault, son of Charly Foucault of Clos Rougeard, together with his partner Caroline. The estate remains at around seven hectares, farmed organically on the limestone and tuffeau soils around Brézé: two-thirds Chenin Blanc, partly from very old vines, and one-third Cabernet Franc.

The method follows the family tradition: hand harvesting with strict selection, indigenous yeasts, and ageing lasting from two to three years without racking in a very cold underground cellar. Quantities are limited, and the wines are released only at the end of ageing.

The STELT selection includes Saumur Rouge La Ripaille from the 2015 and 2016 vintages, Cabernet Franc from the eponymous lieu-dit, one of the domaine's principal terroirs. Verified provenance.
