Frederic Cossard

Frédéric Cossard founded Domaine de Chassorney in 1996 in Saint-Romain, in the Côte de Beaune, on leased plots between Saint-Romain and Auxey-Duresses. Since 2006, he has run a négoce business alongside the domaine with his wife Laure: organically grown grapes purchased mainly from Burgundy climats, vinified and labelled under his name.

The method has been that of natural wine from the outset: indigenous yeasts, whole bunches, no clarification or filtration, and no added sulphur. In recent years, concrete eggs, terracotta jars and Georgian qvevri have joined the oak barrels.

The STELT selection includes Bedeau 2020, a Bourgogne red made from Pinot Noir from forty- and fifty-year-old vines in Volnay and Nuits-Saint-Georges, Cossard's best-known cuvée. Provenance verified.
