Macallan
The distillery has operated since 1824 in Craigellachie, in Speyside, at the Easter Elchies estate overlooking the River Spey, and is among the first in Scotland to obtain a legal production licence.
The element that defines the character of the spirit is the cask: Macallan selects oak in Spain and America, has it worked and seasoned in Jerez with sherry before shipping it to Scotland, a cycle that takes several years for each individual cask. Hence a stated choice: no added colouring caramel, with a colour that varies significantly from one bottling to another.
The stills are among the smallest in Speyside. The range includes age-statement expressions, the Edition and Concept series, and collector's gift sets. Traceable provenance.
