Domaine Paul Pillot

The domaine is based in Chassagne-Montrachet and is run by Thierry Pillot with his sister Chrystelle. The estate covers around thirteen hectares, concentrated between Chassagne and Saint-Aubin.

The holdings include the Chassagne premier crus Les Caillerets, La Grande Montagne, Clos Saint-Jean and Champs Gain, as well as the Saint-Aubin premier cru Les Charmois. Work in recent years has significantly reduced the use of new oak and brought the harvests forward, shifting the style toward greater tension.

The result is taut, saline Chardonnay, far removed from the richer profiles with which Chassagne was long identified. The range also includes Chassagne reds and an Aligoté. Controlled storage, traceable provenance.
