Domaine Paul Pillot
The estate is located in Chassagne-Montrachet and is run by Thierry Pillot with his sister Chrystelle. The property spans approximately thirteen hectares, concentrated between Chassagne and Saint-Aubin.
The holdings include Chassagne's premier crus Les Caillerets, La Grande Montagne, Clos Saint-Jean, and Champs Gain, and Saint-Aubin premier cru Les Charmois. In recent years, the use of new oak has been significantly reduced, and harvests have been brought forward, shifting the style towards greater tension.
The result is taut and savory Chardonnays, far from the richer profiles with which Chassagne has long been identified. The range also includes Chassagne reds and an Aligoté. Controlled storage, traced origin.
