Philippe Pacalet

Philippe Pacalet works in Beaune as a négociant of a particular kind: he buys grapes, not wines, and has vinified them himself since 2001, after a decade as régisseur of Domaine Prieuré-Roch. The grandson of Marcel Lapierre, the leading figure in natural Beaujolais, he trained in Beaujolais before arriving in Côte d'Or.

The method is the same for all the cuvées: whole-cluster fermentation with indigenous yeasts, no sulfur added during winemaking or aging, élevage in used pièces without new oak, and bottling without filtration. He is a reference in natural wine in Burgundy, applying the approach to Grand Cru wines as well.
