Demerara Rum

Demerara is the name of the river that flows through Guyana and identifies the style of rum produced on its coast. It is not a single distillery: it is the collection of the country's historic stills, now all concentrated at the Diamond plant after the progressive closure of the other sites.

The resulting heritage is unparalleled: the Port Mourant double wooden pot still, the Versailles single wooden pot still, and the wooden Coffey still from Enmore are the last wooden stills still in operation in the world. Each imparts a recognizable aromatic profile that cannot be replicated with copper stills.
