Rum Demerara

Demerara is the name of the river that runs through Guyana and identifies the style of rum produced on its coast. It is not a single distillery: it is the collection of the country’s historic stills, now all concentrated at the Diamond facility following the gradual closure of the other sites.

The resulting heritage is unparalleled: the Port Mourant double wooden pot still, the Versailles single wooden pot still, and the wooden Coffey still from Enmore are the last wooden stills still operating in the world. Each imparts a distinctive aromatic profile that cannot be replicated with copper equipment.
