Tassin

Thibault Tassin belongs to a family of winegrowers from the Côte des Bar, in the Aube. Since 2019, he has run an independent domaine with his wife Alizée: just over one hectare in Celles-sur-Ource, with the cellar in Landreville. The vines are farmed organically: the first certified vintage is 2024.

The work revolves around individual parcels: the Les Fioles lieu-dit, planted to Pinot Noir, and Dalivard, planted to Chardonnay, both in Celles-sur-Ource on Kimmeridgian subsoil. Les Fioles is vinified in casks and amphora; all the cuvées are released without dosage, brut nature.

The STELT selection includes Les Fioles 2021, a single-parcel blanc de noirs, En Dalivard 2019 in magnum, a blanc de blancs, and Soirée d'Hiver en Pays Aubois, a blanc de noirs from grapes grown in Celles-sur-Ource and Essoyes. Provenance verified.
