Vincent Dauvissat

The domaine is based in Chablis and continues the work begun by his father René, with Vincent Dauvissat taking over in the late 1980s. The estate covers around twelve hectares and includes the grand cru Les Clos and Les Preuses, as well as a selection of premier cru vineyards, including La Forest, the estate’s largest and most distinctive site, together with Séchet, Vaillons, and Montée de Tonnerre.

Farming follows organic and biodynamic principles, with mechanical soil cultivation and no chemical herbicides. Slow pressing, indigenous yeasts, and partial ageing in used barrels with no new oak produce taut, saline Chablis wines that are closed in their early years and become increasingly defined in bottle.

It is one of the historic benchmarks of the appellation. Stored under controlled temperature and humidity, with traceable provenance.
