Jura wines

Jura is a tiny region nestled between Burgundy and the Swiss border, and it is the only one in France to have built its identity around a technique rather than a grape variety: aging under a layer of yeast, without topping up the barrel.

This produces sous voile wines and Vin Jaune, with their oxidative profile of walnut and curry, alongside direct, ouillé-style wines. The grape varieties are Savagnin and Chardonnay for the whites, Poulsard, Trousseau, and Pinot Noir for the reds, often with very low yields.

The STELT selection favors producers who work organically or biodynamically, with reduced sulfur use. Controlled storage and traceable provenance.
