Caribbean Rum

Caribbean rum is not a single category: each island has developed its own method, and the difference between one style and another is more pronounced than between many wine denominations.

Jamaica uses pot stills with very long fermentations and very high ester content. Barbados combines pot stills and columns, with a public stance on additive transparency. Guyana preserves unique historical wooden stills. Trinidad has seen its distilleries close, making existing quantities finite.

Tropical aging accelerates evolution: a ten-year-old rum in the Caribbean has lost as much in the barrel as a Scotch in thirty. Controlled preservation, traceable origin.
