Caribbean Rum

Caribbean rum is not a single category: each island has developed its own method, and the difference between one style and another is more pronounced than it is among many wine appellations.

Jamaica works in pot stills with extremely long fermentations and exceptionally high ester levels. Barbados combines pot stills and column stills, with a public position on additive transparency. Guyana preserves historic wooden stills that are unique in the world. Trinidad has seen its distilleries close, making existing quantities finite.

Tropical aging accelerates maturation: a ten-year-old rum in the Caribbean has lost as much in the cask as a Scotch has in thirty years. Controlled storage, traceable provenance.
