Ecume

Écume is a micro-négoce project launched in 2024 by Jean-François Gamet, alongside the family maison, Champagne Gamet. The wines are made in a small family cellar restored in Fleury-la-Rivière, in the Vallée de la Marne.

The grapes are not estate-grown: they come from organic-grower friends, for the first releases from the villages of Mardeuil and Chamery premier cru. Fermentation with indigenous yeasts in barrel or demijohn, minimal sulfur, no dosage, no filtration or fining.

The STELT selection includes the two non-vintage cuvées: Blanc de Chardonnay, from grapes in Mardeuil with a brief maceration before pressing, and Blanc de Pinot Noir premier cru, from Chamery, slowly pressed in a vertical press. Verified provenance.
