Description
Écume’s Blanc de Pinot Noir is a Champagne Premier Cru Brut Nature made entirely from Pinot Noir, vinified as a white wine, here in the one-and-a-half-liter Magnum format. It comes from Chamery, a Premier Cru village in the Petite Montagne de Reims, from two vineyards: “La Pucelle” and “Les Gillis.”
Écume is the personal project of Jean-François Gamet, who works at Champagne Gamet and launched this small négociant operation in 2024. He makes and ages his wines in an old cellar at the top of the village of Fleury-la-Rivière, in the Vallée de la Marne.
The grapes come from friends who are winegrowers, among the finest young producers in Champagne, and only from those who farm organically. In the cellar, they ferment with native yeasts, in old barrels or glass demijohns, undergo malolactic fermentation, receive very little sulfur dioxide, and are bottled without fining or filtration. None of Écume’s wines receive dosage.
At Chamery, the vineyards climb to nearly 200 meters and face northeast, on sand, clay, and limestone, with little topsoil. A sandier soil than Mardeuil’s, giving the Pinot Noir finesse rather than power. This wine ferments and ages in old barrels and rests on the lees for 18 months before disgorgement.
Gamet seeks expressive, complex Champagnes, produced in tiny quantities. Zero dosage lets the Pinot Noir and the place speak for themselves, without adjustment. In Magnum, the wine evolves more slowly than in bottle, because there is twice as much wine for the same amount of air in the neck: that is why it is the preferred format for those who want to let it age for a few years.
In Écume’s small range, the Blanc de Pinot Noir sits alongside Mardeuil’s Blanc de Chardonnay: two wines, each made from a single grape variety, from the project’s first vineyards.
In the selection of STELT, this Magnum is the most generous way to discover one of the new names in Champagne, in the right format for occasions to share.
