Description
Écume’s Blanc de Chardonnay is a Champagne Brut Nature made entirely from Chardonnay, here in a one-and-a-half-liter Magnum format. It comes from Mardeuil, in the Vallée de la Marne, from a vineyard called “Chapotte.”
Écume is Jean-François Gamet’s personal project. He works at Champagne Gamet and launched this small négociant business in 2024. He makes and ages his wines in an old cellar at the top of the village of Fleury-la-Rivière.
The grapes come from friends who are among the finest young winegrowers in Champagne, and only those who farm organically. In the cellar, they ferment with indigenous yeasts, in old barrels or glass demijohns, undergo malolactic fermentation, receive very little sulfur dioxide, and are bottled without fining or filtration. None of Écume’s wines receive dosage.
Chapotte faces north, at the top of the hill, in a small, windy valley, on clay with limestone rock below. Mardeuil is a cold village, with vineyards facing north and west: conditions that yield taut grapes, suited to a Champagne with no added sugar. This Chardonnay ferments and ages in old barrels and rests for 18 months on the lees before disgorgement.
Gamet seeks rich, complex Champagne, produced in tiny quantities. Zero dosage lets the Chardonnay and the place speak for themselves, without adjustment. In Magnum, the wine evolves more slowly than in a bottle, because there is twice as much wine for the same amount of air in the neck: that’s why it’s the preferred format for those who want to let it age for a few years.
In Écume’s small range, the Blanc de Chardonnay sits alongside the Blanc de Pinot Noir, Premier Cru from Chamery: two wines, each made from a single grape variety, from the project’s first vineyards.
In the STELT selection, this Magnum is the most generous way to get to know one of the new names in Champagne, in the perfect format for occasions to share.
